Ingredients for Making Miso Soup for 4 Servings
+50g dried seaweed
+ 3 tablespoons miso paste
+ 1 teaspoon dashi stock powder (you can buy ready-made dashi stock powder or make dashi stock liquid following the instructions below)
+ 200g tofu, cut into 1.25cm square pieces
+ Seasonings, green onions
The chef at Sashimi BBQ Garden spills the beans, revealing that the key to delicious Miso soup lies in dashi and miso paste. In Japanese tradition, Miso soup always features dashi fish stock powder and miso paste— a Japanese condiment primarily made from soybeans, rice, barley, fermented with salt and koji mold, resulting in a thick, savory sauce used for making miso soup and sauces.
The head chef at Sashimi BBQ Garden also suggests that if obtaining Miso paste and dashi directly from Japan is not feasible, you can find ready-made Miso paste and dashi at Japanese supermarkets.

How to Cook Miso Soup:
Step 1: Soak the seaweed
Take a large bowl, cut the dried seaweed into bite-sized pieces, then soak in water for about 10 minutes. This step should be prepared first before starting to cook. Afterward, rinse thoroughly to remove any sand (if present) and let it drain.
Step 2: Dissolve miso in water and bring to a boil in a pot. Mix dashi with boiling water, then take ¾ of the mixed dashi and pour it into the miso, stirring until the mixture is completely dissolved

Soak seaweed until it expands, then dissolve miso and dashi in water.
Step 3: Add tofu and seaweed to the boiling miso pot, bring to a boil again. Then add the pre-mixed miso and dashi water, bring to a boil again. Finally, season with green onions, turn off the heat, ladle into a bowl, and savor.
