Last week, my brother treated me to dinner at BBQ Garden on Hue Street (because it's close to where he works). Initially, I was captivated by the classic, elegant, and cozy ambiance, but I wasn't too excited about the food as it seemed a bit limited. However, once we started eating, I realized there was an abundance of dishes; in fact, there were so many that we couldn't possibly try them all. Each dish was of exceptional quality, and the grilled items came with nearly a dozen homemade dipping sauces, offering a variety of flavors to suit every taste!
Initially, I was drawn to the classic, cozy ambiance of BBQ Garden.
Among the array of grilled dishes at BBQ Garden that day, my favorite was undoubtedly the tangy and aromatic fried chicken wings, crispy and hot, bursting with flavor, absolutely delightful to munch on! I devoured four of those wings that day, and even got teased by a mischievous friend for 'eating like a pig on a mission to stay single'.
Later on, I discovered that the food here is top-notch, especially in terms of marination and sauces.
On a chilly day like this, whipping up this dish occasionally is quite satisfying. Let me share with you the simplest yet most delicious recipe for crispy and flavorful tamarind chicken wings to enjoy during this chilly season!
Create Delicious Tamarind Chicken Wings the Easy Way!
Ingredients: Chicken wings, tamarind (fresh or dried) or ready-made tamarind paste, crispy frying flour, salt, pepper, sugar, garlic, onion, chili sauce.
And amidst the entire meal at BBQ Garden, my favorite remains the crispy and flavorful tamarind fried chicken.
First, clean the chicken wings, pat dry, marinate with 1.5 tablespoons of sugar, half a teaspoon of salt, 1 small teaspoon of pepper, 1 tablespoon of delicious fish sauce for at least 2 – 3 hours. You can marinate the chicken in the morning, keep it in the fridge, and cook it in the evening; this way, the dish will be exceptionally flavorful.
If using dried tamarind, soak it in hot water, then separate the pulp. If using fresh tamarind, peel, boil with water, mash, and strain. Finely chop onions and garlic.
Once the oil is hot, add the chicken wings coated in crispy frying flour, fry over medium heat until golden brown on both sides, then remove and drain excess oil.
Fry the chicken wings until evenly golden brown, turning occasionally.
While waiting for the chicken wings to drain excess oil, prepare tamarind sauce by mixing tamarind pulp water with sugar, fish sauce, and chili sauce/fresh chili to taste. The common formula for this sauce is 2 parts sour, 1 part salty, 1 part sweet, and adjust the spiciness according to your preference.
Prepare Tamarind Sauce
Sauté finely chopped onions and garlic until fragrant, add tamarind sauce, stir over high heat. Once the tamarind mixture is boiling, add the crispy fried chicken wings, mix thoroughly and simmer until the tamarind sauce thickens. At this point, the golden crispy chicken wings will be coated with a shiny brown tamarind glaze, rich and enticing to the eyes!
Evenly drizzle the sauce over the arranged chicken on a plate and serve immediately while still hot
This dish is best enjoyed hot. At home, we pair it with steaming hot rice, but at BBQ Garden that day, we were too stuffed from all the hotpot and grilled dishes, so I only indulged in this one.
