Mixed rice paper is a favorite snack cherished for its spicy sate sauce, tangy mango, sweet and chewy texture, along with crispy beef jerky or creamy quail eggs soaked in irresistible sweet and sour sauce.


To create a harmonious blend of various ingredients resulting in a flavorful and enticing product, you need to know how to select the right ingredients and prepare them properly. Today, we will guide you on how to make Southern-style mixed rice paper in a very simple way.
Ingredients for making mixed rice paper

– 1 pack of dry rice paper (round, white)
– 1 green mango
– 10 quail eggs
– 3 fresh kumquats
– 5 grams of pork floss
– 40 grams of shredded dried beef
– 100 grams of spring onions and shallots
– 50 grams of laksa leaves
– 50 grams of crispy roasted peanuts
– Sate sauce, cooking oil, soy sauce, Tây Ninh salt for seasoning (Tây Ninh salt is available at supermarkets or online stores)
Tools needed for making mixed rice paper
– Scissors
– Clean plate
– Clean bowl
– Nylon gloves
– Vegetable shredder tool
How to make mixed rice paper
Step 1:
– Use scissors to cut rice paper into long rectangular strips, wide side. Avoid cutting the rice paper too small or short, as it will absorb water and crumble when mixed. Place separately on a clean plate.

– Peel the green mango and then shred it into small strands lengthwise. Place separately in a clean bowl.

– Finely shredded dried beef. Set aside.

– Thinly shredded pork floss (visible strands without clumping). Set aside.

– Finely chopped laksa leaves, set aside.

Step 2:
– Thinly slice shallots. Heat cooking oil in a pan until hot. Then add the shallots and stir-fry until fragrant and golden brown. Transfer to a clean bowl and let cool.

– Mix 1 tablespoon of sate sauce with cooking oil (you can add crispy fried shallots if desired). Stir well.

– Wash spring onions and chop finely. Heat cooking oil in a hot pan, then add the spring onions to make spring onion oil. When adding the spring onions, stir for a few seconds then turn off the heat to keep the spring onions green.

– Boil quail eggs until cooked, then peel off the shells.
Step 3:
– Use a clean mixing bowl, add rice paper, mango, dried beef, pork floss, fried shallots, spring onion oil, and sate sauce into the bowl.
– Sprinkle some salt, soy sauce, and a few drops of kumquat juice, then gently mix to prevent the rice paper from breaking.
– Finally, add finely chopped laksa leaves and roasted peanuts, then mix everything together one more time.

Note:
– Since rice paper absorbs water quickly, it's best to eat immediately after mixing. If you want to prepare ahead, keep the ingredients separate and mix just before eating.
– After preparing the ingredients, only dip the rice paper in water to avoid it becoming soggy beforehand.
