In addition to well-known favorites like bánh mì and phở, 2024 saw numerous Vietnamese dishes proudly secure spots in global rankings.
Stir-fried vegetables
Stir-fried water spinach, stir-fried crab noodles, stir-fried su su with garlic, stir-fried snail, and stir-fried pho made it to the Top 100 Stir-Fried Dishes list of Taste Atlas. Among them, stir-fried water spinach is a simple yet popular Vietnamese dish, often served at family meals. It ranks 17th out of 100. It’s described as “perfect for vegetarians.” Stir-fried water spinach with garlic is served hot, paired with savory dishes, soups, and white rice.

Salads
Beef salad, shrimp and pork salad, and mixed pho are among the best salad dishes in Asia. Taste Atlas describes them as salads prepared in various styles. Depending on the region, they are called gỏi, nộm, or trộn. Beef salad ranks 13th out of 86. The dish consists of beef, lime leaves, chili, cilantro, mint leaves, cucumber, carrots, and tomatoes. The dressing is a mixture of lime juice, fish sauce, chili sauce, and sugar. The beef used is tenderloin, sliced thin, marinated, and stir-fried before being mixed together.

Broken rice
Bánh mì and phở are two iconic dishes that have long been recognized as part of the Top 100 Best Street Foods in the World. While bánh mì and phở have frequently appeared on these lists, Taste Atlas has now officially included broken rice. Rated 4.5 stars, broken rice ranks 40th. It is made from rice grains that break during drying, transportation, or milling. It is typically served with a fried egg, pork skin, grilled ribs, sliced tomatoes, cucumbers, pickled vegetables, green onion oil, and a sweet and sour fish sauce.

Tapioca dumplings
Tapioca dumplings are the sole representative of Vietnamese cuisine in the Top 35 Best Dumplings in the World, as ranked by CNN. Originating from Huế, these dumplings have gained popularity throughout Vietnam. The dumplings feature a translucent tapioca shell filled with colorful shrimp and pork. When cooked, the wrapper becomes transparent, allowing the filling to be visible. They are wrapped in dong or banana leaves, and traditionally served with a sweet and sour fish sauce for dipping.

Fermented pork rolls
Fermented pork rolls are the only Vietnamese dish to make it into Taste Atlas’ list of the 52 Best Dishes with Chili in the World, ranking at 50th. This dish is made from pork mixed with shredded pig skin, along with spices, chili, and garlic. The mixture is wrapped in banana leaves and left to ferment for 3 to 5 days. The result is a dish that blends sour, sweet, and spicy flavors, often enjoyed as a snack with chili sauce for dipping.

Gà luộc, cà ri gà, gỏi gà và gà kho sả lọt top 65 món làm từ gà ngon nhất châu Á của Taste Atlas. Gà luộc tượng trưng cho sự dồi dào, thịnh vượng, thường ăn kèm xôi. Các món gà này đều thơm ngon, dễ ăn và mang đặc trưng của từng điểm đến.

Canh chua cá và cá kho tộ, canh cá và lẩu cá linh bông điên điển
Canh chua cá và cá kho tộ là hai đại diện của ẩm thực Việt Nam trong 53 món ăn từ cá ngon nhất châu Á do Taste Atlas bình chọn. Trong đó, canh chua cá đứng thứ 11. Canh chua cá là món ăn phổ biến trong các bữa ăn của người miền Nam. Canh được chế biến từ cá lóc, điêu hồng hay cá basa. Nước dùng được nấu cùng me, dứa, cà chua, đậu bắp, giá hoặc các loại rau khác tùy khẩu vị. Canh cá ăn kèm rau thơm và cơm trắng. Canh chua có thể có nhiều biến thể khác. Thành phần nấu canh cũng thay đổi theo vùng. Vị chung của món này thường chua, hơi ngọt, thơm và một ít cay.

Three-colored chè is the only dessert to make it into Taste Atlas' list of the 100 Best Desserts in Asia, ranking 82nd. Flan
Flan ranks 87th in Taste Atlas' list of the 100 Best Desserts in Asia. Though originally from Europe, this dessert is now enjoyed worldwide. In Vietnam, flan is commonly served as a dessert or a mid-day snack. The dish is made from eggs, milk, and caramelized sugar, with a soft texture and a smooth layer of caramel on top. In some places, it's served with coconut milk and chewy tapioca pearls for an extra touch of sweetness.
