Bánh bèo 65 Chu Văn An
Known as the place with the highest bánh bèo sales in Hải Phòng, this shop sells over 2,500 pieces a day. Bà Mây's bánh bèo shop is located at 65 Chu Văn An, right in the heart of Hải Phòng city.
The dough for the bánh is made from rice flour, soaked for at least 6 hours and then finely ground. Afterward, the rice flour is cooked and stirred until smooth. The filling consists of minced pork, fried shallots, and finely chopped wood ear mushrooms, all mixed together and placed in molds with the dough before being steamed for about an hour.
Next, the prepared filling is placed under a banana leaf-lined mold, and the dough is poured on top. Once steamed, the dough turns opaque white, releasing the fragrance of rice flour, while the filling of pork, wood ear mushrooms, and fried shallots blends together. The steamed bánh is then kept warm in an insulated container. When customers arrive, they are served with a hot dipping sauce made from bone broth simmered on the stove. The dish is also served with quail sausage, meatballs, fried shallots, and cilantro.
