Giẻ áo is a nostalgic dish for the people of Cam Ranh. This delicacy is also known by other names such as cà xỉu and giá bể.
This is a bivalve species, somewhat similar to mussels found in the Mekong Delta. However, it is shorter and rounder, with a distinctive feature being a long, ivory-colored tail measuring about 3-5 cm. At first glance, this tail resembles bean sprouts, which is why it is sometimes called “giá bể” (sea sprouts).


Dishes Made from Giẻ áo
To create dishes from this creature, thorough preparation is essential. Without proper cleaning, it can have a strong, unpleasant odor. When cooked, the dish becomes incredibly flavorful, with a rich, buttery taste and a crunchy, satisfying tail that leaves a lasting impression.
People typically harvest giẻ áo between June and August, as this is when they are most abundant. They are collected using a small, flat tool about 10 cm wide and 20 cm long. By pressing the tool about 10 cm into the sand and lifting, the entire creature, including its long tail, is captured. In some areas, locals even gather them by hand.

Giẻ áo is often prepared into various delicious dishes such as stir-fries, salads, and porridge. Before cooking, they are soaked in water to remove sand and reduce the fishy taste. The sweet, fragrant meat paired with the crunchy tail creates a memorable flavor that lingers on the palate.
