While some versions of the daiquiri can be overly sugary and blended into a frozen concoction, the classic recipe is a straightforward mix of rum, lime juice, and simple syrup. To create the pineapple version, you only need to swap in fresh pineapple juice. However, to keep the balance of acidity just right, it’s crucial to use freshly squeezed pineapple juice; otherwise, the drink will lack the vibrant flavor it needs. Thankfully, juicing your own pineapple is a breeze — all you need is a blender (even a stick blender will do). Once you're set up, gather these ingredients:
1 cup of fresh pineapple chunks
2 ounces of your preferred light rum (I recommend Plantation 3 Star for its quality and affordable price, typically around $17.)
1 ounce of simple syrup made by combining equal parts water and turbinado sugar
Blend fresh pineapple until it's completely liquefied (the more liquidy your puree, the more liquid your drink will have). Add two ounces of fresh, juicy puree, two ounces of rum, and one ounce of simple syrup into a shaker. Fill the shaker with ice, shake it up, and strain the mix into a coupe glass. Sip and enjoy your sunshine in a glass. (Pro-tip: Shake it vigorously to create a frothy foam on top—no egg white required.)
