Hello everyone, and welcome to another episode of 3-Ingredient Happy Hour, your weekly guide to crafting easy yet delightful cocktails. This week, we’re mixing up a Pimm’s Royale, inspired by my recent trip to the United Kingdom, which has left me in a blissful post-vacation mood.
During my trip, I visited several cocktail bars (naturally) and noticed that, except for one classic-focused spot, most served incredibly intricate drinks. (Note: Pubs are a different story—they don’t do fancy cocktails.) I sampled a sourdough-infused concoction, a drink with a perplexing ice cube, and even one garnished with a “North American coyote claw.”
While these were fun and tasty, they made me crave something simpler. Combined with my desire to extend the British vibe, I turned to my bottle of Pimm’s. For those unfamiliar, this gin-based liqueur is a delightful blend of fruity and spicy flavors, perfect for refreshing drinks. Instead of the garnish-heavy Pimm’s Cup, I opted for the more straightforward and boozy Pimm’s Royale. Here’s what you’ll need:
1 3/4 ounces of Pimm’s No. 1
Sparkling wine (Champagne, Prosecco, or Cava will do)
Strawberries for garnish
Start by chilling a champagne flute or a similar tall, slender glass for approximately 15 minutes. Once thoroughly chilled, add the Pimm’s and sparkling wine, then garnish with a slice of strawberry. You can either place it on the rim or let it float inside the glass. Feeling adventurous? Go all out and perch an entire strawberry on the rim—it’s Friday, so why not?
