I made my panko scramble without cheese—because cheese often masks imperfections—and it turned out rich, savory, and indulgent. Aside from that, I followed the recipe pretty closely, although I stirred the panko a couple of times to ensure it browned properly, as crisp panko keeps the crumbs from becoming soggy in the eggs. I’ll definitely add cheese next time, as I love it, but those who prefer to skip it can rejoice that it’s not necessary.

Ingredients:
Two tablespoons of butter
