
Tofu puffs are, without a doubt, my favorite type of tofu. These pre-fried pieces are both chewy and crispy, with a honeycomb-like center that soaks up sauces like magic. They're also surprisingly hollow, making them the perfect vessel for stuffing—like pizza sauce and mozzarella cheese.
As a dedicated tofu puff enthusiast, I was honestly surprised by how well the crispy fried soybean nugget worked as a substitute for the traditional doughy crust. It was crispy, yes, but with an enjoyable chewy texture that I can only describe as 'pure fun.' Plus, as someone who's been lifting heavy weights and working on those gains, every extra bit of protein counts. They're also a great choice if you're trying to reduce carbs. (And, of course, they passed the Ultimate Pizza Roll Test: they scorched my mouth.)

Making tofu puff pizza rolls is surprisingly simple, though a bit messy. To begin, you'll want to prepare your filling with a mix of two parts shredded mozzarella to one part pizza sauce by volume. I used 1 cup of cheese and 1/2 cup of sauce, which was enough for two packs of tofu puffs (around 40 pieces).
Once your filling is ready, it’s time to stuff the puffs. Position them on their most stable side and carefully score an 'x' on the top with a sharp knife, being sure not to cut all the way through.
Scoop a teaspoon of filling and gently press it into the puff with your fingers. I know, it’s a little gross, but it’s the easiest way to stuff them. Keep adding filling until the puff is full, then sprinkle some extra mozzarella on top.
Bake the puff rolls at 350℉ until the tops are golden and bubbly. I used an air fryer, which took about three minutes. (A second batch with chilled filling took five minutes.) If you're using an oven, it will take a bit longer, so start checking at the five-minute mark and take them out once the tops are nicely browned.

You can eat the pizza roll puffs right away for that piping-hot, molten cheese experience that'll scorch your mouth, or let them cool off for a few minutes. Personally, I love serving them with extra pizza sauce for dipping, though garlic sauce would definitely be an awesome choice too.
