When apples come your way, take the opportunity to try this quesadilla recipe. The tart sweetness of apple slices blends beautifully with melted cheddar cheese, and the secret twist comes from a generous spread of tangy honey mustard on the tortilla. For the best results, ensure your quesadillas are golden and crispy before flipping. Honeycrisp apples are ideal, but if they're not available, Gala, Braeburn, or Pink Lady apples are great alternatives.
Ingredients for the recipe include the following:
- • 5 tablespoons of honey mustard, separated for later use.
• 8 pieces of 6-inch flour tortillas.
• 6 ounces (around 1½ cups) of shredded sharp Cheddar cheese.
• 2 Honeycrisp apples, thinly sliced (approximately 2½ cups).
• 5 tablespoons of olive oil, divided.
• 1 tablespoon plus 1 teaspoon of fresh lemon juice (from one lemon).
• ¼ teaspoon kosher salt.
• 1 package (5 ounces) of fresh baby spinach.
• 2 avocados, sliced (about 2 cups).
• ¼ cup of roasted, salted pumpkin seeds (pepitas).
Steps for preparation:
1. Spread 4 tablespoons of honey mustard evenly over each tortilla. Add 3 tablespoons of shredded cheese and a heaping ¼ cup of sliced apples to the center of half of each tortilla. Fold the tortillas in half.
2. Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat. Add 4 quesadillas, cooking and flipping once, until golden brown and crispy on both sides (2-3 minutes per side). Transfer to a plate and cover loosely with foil to keep warm. Repeat with the remaining 1 tablespoon of oil and the other quesadillas.
3. In a large bowl, whisk together lemon juice, salt, and the remaining 1 tablespoon of honey mustard. Slowly add in the remaining 3 tablespoons of olive oil, whisking until the dressing is well-mixed. Toss the spinach, avocados, and pumpkin seeds in the dressing to coat thoroughly. Serve with the quesadillas on the side.
