
There’s a time for fancy snacks—dinner parties, cocktail evenings, or any time you decide to wear your ‘fancy’ clothes—but what about those lazy days in? The ones where you’re staying in, no makeup, and relaxed? That’s when these cheese-stuffed air fryer biscuit balls are perfect. Easy to whip up, fast to cook, and ideal for munching while lounging on the couch. (Whether or not you want to share is up to you.)
The pairing of "biscuits and cheese" is a comforting duo that soothes the soul and fills your stomach. A dash of butter and garlic salt complete the flavor, making these cheese-filled biscuit balls irresistible to the last bite. For this recipe, I use canned biscuit dough—it’s much easier to work with than homemade flaky dough, which isn’t meant to be overworked. Plus, it makes the recipe quicker and simpler. Oh, and maybe I had a couple of extra cans of biscuit dough from Thanksgiving. Perhaps you do too.
I opted for low-moisture mozzarella to create the cheesy center. It's an unsung hero in the mozzarella family, crucial for recipes requiring stretch. This version is more concentrated in flavor and offers a great balance of salt. It provides the same stretchiness as fresh mozzarella but without the excess water, which can dilute the flavor and prevent the dough from fully cooking inside the biscuit pocket. If you don’t mind less stretch, you can substitute with any other low-moisture melting cheese, like cheddar, Swiss, or gouda.
To make these, you’ll need an air fryer:

How to prepare cheese-stuffed biscuit balls
Cut the block of mozzarella into a few slabs, each just under an inch thick. Slice those slabs into six equal squares, which will be nearly one-inch cubes. Open a can of biscuit dough, and each biscuit will become one ball.

Place a piece of cheese in the middle of a biscuit. Fold the edges over the cheese and press them together tightly. This may require some firm pinching. Turn the ball over so the seam is facing down. Repeat for the remaining biscuit balls. Afterward, revisit the first batch and make sure the seams are sealed. Pinch any gaps shut.

Air fry the biscuit balls, seam side down, for 8 to 10 minutes at 375°F using the “air fry” setting. The biscuits should turn golden brown on the outside. Let them cool for at least five minutes on a wire rack. Once cooled, brush with melted butter and sprinkle with salt and seasoning before serving.
I used garlic powder and salt, but I think Italian seasoning, herbes de provence, or everything bagel seasoning would work wonderfully. You can also add seasonings, seeds, or a little hot sauce inside the cheese block before sealing it up. Just be cautious with sauces, as too much moisture can make it harder to seal the biscuit and might prevent the dough from cooking all the way through.
Cheese-Filled Biscuit Balls
Ingredients:
1 can of biscuit dough
8 cubes of low-moisture mozzarella (about ¾ to 1-inch cubes)
1 tablespoon melted butter
Garlic salt or other dry seasonings for sprinkling
1. Set the air fryer to 375°F and preheat using the “air fry” function.
2. Open the can of biscuit dough. Place a piece of cheese in the center of each biscuit. Fold the dough over the cheese and pinch the edges to seal it into a ball. Turn the ball over so the seam is facing down. Repeat this process with the remaining biscuits. Make sure the seams are fully sealed, and pinch any openings that may have formed.
3. Air fry the biscuit balls for 8 to 10 minutes, adjusting the time based on your air fryer. The biscuits should turn a rich, even brown. Allow them to cool on a wire rack for a few minutes. Once cooled, brush melted butter over each biscuit ball’s surface. Sprinkle with garlic salt or any seasonings of your choice.
