4 boneless, skinless chicken thighs (around 1¼ lb.)

Instructions
Prepare the rice noodles by following the directions provided on the package.
While the noodles are soaking, heat oil in a grill pan or cast-iron skillet over medium-high heat. Season the chicken with salt and pepper, then cook, flipping once, until it’s charred and fully cooked, about 4 to 5 minutes per side. Once done, transfer the chicken to a cutting board and let it rest for 5 minutes before slicing thinly.
In a small bowl, whisk together the peanut butter, coconut milk, lime juice, soy sauce, and sriracha until smooth.
Serve the sliced chicken and noodles on lettuce leaves with cucumber and peanut sauce. Top with scallions, basil, and peanuts for added flavor and crunch.
