I've always enjoyed starting my day with cottage cheese, even before its resurgence in popularity during the 2020s. It’s satisfying, versatile, and pairs well with a variety of plant-based foods. And most importantly, it’s quick. I don’t need to whip it or try to force it into something it’s not. I simply put it in a bowl and add toppings. A bowl of cottage cheese is just as easy to prepare as cereal but will keep you fuller for much longer. (Bonus: Add a vegetable topping and you’ll feel virtuous.)
I appreciate that the kids are excited about cottage cheese, but their attempt to transform it into something else is unnecessary. Unaltered, cottage cheese is incredibly versatile, with a savory, salty flavor and a nice touch of lactic tang. If the curds put you off, I’m not sure what to say. (Actually, I do: Grow up.)
My go-to breakfast is a simple combination of cottage cheese, fruits or vegetables, and seasonings. It’s flexible enough to suit any mood, even my grumpiest mornings. Right now, I’m loving a mix of tomato and bagel seasoning, thanks to the bounty from my garden. Occasionally, I add some nutritional yeast. Cottage cheese is also perfect for using up leftover roasted veggies or fruit cocktail that didn’t make it into my kid’s lunch. Here are some more quick cottage cheese breakfast ideas:
Roasted carrots + curry powder
Olives + za’atar
Canned peaches + cinnamon
Pickled apples + cracked black pepper
Pico de Gallo + a squeeze of lime
Pineapple + nutmeg
Strawberry jam + lemon zest
Pistachios + honey
Breakfast radishes + flaky sea salt
Mango + honey + fresh mint
Tomatoes + bacon bits + scallions
Any vegetable + chili crisp
As you can see, cottage cheese is endlessly versatile, effortlessly adapting to both sweet and savory combinations. A word of advice: avoid the low- or no-fat versions, as they can taste grainy and dry, lacking the satisfying texture. After all, the goal is to start your day feeling fully satisfied.
