
While I’m not one to splurge often on dining out, I do enjoy treating myself occasionally. A couple of times each month, I swap my work-from-home attire for something more polished and head out, anticipating a delightful cocktail and some exquisite bites. During a recent visit to a Tom Colicchio restaurant with friends, I was pleasantly surprised by a cheese platter featuring savory, crunchy crackers packed with seeds. What struck me most wasn’t the price or the flavor, but the realization that these gourmet crackers could easily be recreated at home using an air fryer, saving both money and effort.
The air fryer is perfect for making quick, crispy crackers
While the air fryer may not be the best tool for toasting bread, it excels at transforming bread into a perfectly crisp cracker. Its powerful convection system, with its intense, rapid airflow, is ideal for removing moisture quickly, far surpassing the efficiency of a traditional oven. This makes it an excellent choice for reviving stale seeded loaves, turning them into something extraordinary.
I’ve observed that the most upscale crackers, whether sold in stores or featured on wine bar cheese boards, often have a rustic appeal—thick, hearty bread loaded with whole grains, seeds, or nuts. While this method works well with most bread types, I prefer using loaves with a denser texture (fewer large air pockets) and an abundance of seeds and nuts. These ingredients contain natural oils that toast beautifully, enhancing the flavor of the finished cracker—a quality many other crackers lack.
How to create gourmet crackers in your air fryer
One of the best things about making these crackers is how simple the process is. The only real challenge is slicing the bread thin enough without making it so delicate that it burns. I’ve discovered that cutting a standard factory slice in half works perfectly, resulting in a thickness of about a quarter-inch if you’re working with an unsliced loaf.
1. Prepare the bread slices
Thinly slicing bread requires patience and precision. Use the same careful approach as you would when slicing a bagel: employ a serrated knife, cut horizontally, and keep your fingers safely out of the way.
2. An optional salty touch
I borrowed this idea from the Tom Colicchio experience, as crackers can sometimes lack flavor, and salt enhances taste. Mix a quarter-teaspoon of salt into a tablespoon of hot water until dissolved. Using a pastry brush, lightly coat one side of each bread slice with the salty solution. As the water evaporates, it leaves behind a delicate layer of salt.
3. Air fry the bread slices
Arrange the bread slices in the air fryer basket and cook at 325°F for 10 to 15 minutes. Flip the slices halfway through the cooking process and check periodically to monitor their progress. The goal is to achieve a perfectly crisp texture.
The exact cooking time may vary depending on the bread’s moisture level, thickness, and your air fryer model. Using my Instant Vortex, the sunflower seed bread was ready in approximately 12 minutes. The crackers should feel crisp, and if the bread is light-colored, it should have a uniform, light golden hue. Let them cool briefly on a wire rack before pairing them with cheeses, meats, spreads, or dips. Store any leftovers in an airtight container at room temperature for up to a week.
