Options such as Sweet Earth’s Harmless Ham, Tofurky’s deli slices, Frieda’s Soyrizo, and Field Roast’s celebration roasts are excellent examples. Discovering your favorite might require some experimentation, but the expanding selection makes it easier to find something you’ll enjoy.
Creating your own plant-based meat alternatives
If you have extra time and prefer a homemade touch, crafting your own plant-based meat options for a charcuterie board is entirely feasible. Tofu is an ideal choice due to its ease of preparation, ability to absorb flavors, and widespread availability.
“Embrace creativity with tofu—it can be baked, fried, sautéed, or blended, opening the door to countless recipes,” said Marissa Mullen, a food stylist and spokesperson for House Foods America, who specializes in crafting charcuterie plates. Mullen, known on Instagram as @ThatCheesePlate, has experimented with nearly every possible charcuterie combination, including vegetarian boards.
“Tofu is an incredibly versatile ingredient, with its mild natural flavor and variety of textures,” Mullen explained. “This makes it an excellent base for experimenting with different spices and cooking methods.”
For vegetarian charcuterie boards, Mullen relies on several tofu-based recipes, such as smoky tofu bacon, tofu chorizo, and breaded basil tofu bites, which she generously shared with Mytour.
Tofu Chorizo
Ingredients:
1 package of firm tofu, crumbled
2 tablespoons olive oil
½ tablespoon apple cider vinegar
½ tablespoon of adobo sauce
1 tablespoon chili powder
2 teaspoons smoked paprika
1 teaspoon garlic powder
¼ teaspoon ground cumin
Salt and pepper to taste
Instructions:
1. Mix crumbled tofu, 1 tablespoon of olive oil, apple cider vinegar, adobo sauce, and spices in a bowl.
2. Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat until it shimmers.
3. Cook the seasoned tofu crumbles in the skillet for 10-15 minutes, stirring occasionally, until they turn golden brown and crispy.
Tofu Bacon
Ingredients:
½ package of extra firm tofu
½ cup of soy sauce
2 tablespoons of tomato paste
2 tablespoons of maple syrup
2 tablespoons of liquid smoke
1 tablespoon of olive oil
Salt and pepper to taste
Instructions:
1. Cut the tofu into thin slices, approximately ⅛ inches thick.
2. In a small bowl, mix together olive oil, soy sauce, tomato paste, maple syrup, liquid smoke, salt, and pepper.
3. Place the tofu slices in a shallow baking dish and pour the marinade over them. Let it marinate in the refrigerator for 1-4 hours (or up to 24 hours for deeper flavor).
4. Preheat the oven to 350℉ and lightly coat a non-stick baking tray with oil.
5. Arrange the tofu strips evenly on the tray and bake for 20 minutes. Flip them over and bake for another 15-20 minutes until they are golden brown and crispy.
Breaded Basil Tofu Bites
List of Ingredients:
Half a pack of firm tofu, extra firm variety
Panko bread crumbs, half a cup
Dried basil, one tablespoon
Onion powder, one teaspoon
Kosher salt, half a teaspoon
Ground black pepper, half a teaspoon
Unsweetened oat or almond milk, half a cup
Cooking Steps:
1. Preheat your oven to 425 degrees Fahrenheit
2. Cut the tofu into uniform cubes, each measuring one inch
3. Mix the panko breadcrumbs, dried basil, onion powder, kosher salt, and black pepper in a shallow dish.
4. Pour the unsweetened oat or almond milk into a small bowl.
5. Dip each tofu cube into the milk, then coat it thoroughly with the panko mixture, ensuring all sides are covered.
6. Arrange the coated tofu cubes on a baking sheet and bake for 40-50 minutes, flipping them every 15 minutes, until they turn golden brown and crispy.
