1 ½ cups unsweetened soy milk

½ cup plain whole-milk Greek yogurt

1 small (2 ounce) cooked beet (such as Love Beets or Melissa’s), refrigerated, quartered (about ¼ cup)

1 cup frozen raspberries

1 3 ½-ounce package frozen dragon fruit puree (pitaya)

Pinch of kosher salt

2 teaspoons agave nectar or honey (optional)
Instructions

Place all ingredients into a blender, beginning with the soy milk and yogurt. Blend until smooth, for about 1 minute.
