
Purchasing a jar of pickled sushi ginger will truly transform your life. It soothes my sushi-related anxieties, yes, but I also enjoy adding the ginger and its brine to salads, dressings, and beverages. (It makes a great snack, straight from the jar.)
As the neighborhood kids yell from their perfectly manicured lawns, it’s officially lemonade season. While the classic mix of lemon, sugar, and water is fine on its own, adding a splash of pickled ginger brine elevates this summer drink to new heights.
As we've discussed before, salting summer drinks creates a perfect balance, especially in sweet beverages. Ginger brine adds salt, but also introduces a hint of tartness, a bit of funk, and—of course—a touch of ginger, one of the most exceptional flavors you can find in the earth.
You don’t need much—just two teaspoons of brine per cup of lemonade should do the trick—but keep in mind that there are variations in both lemonade and brine flavors (my favorite is the version that comes with the vibrant pink ginger). Start with one teaspoon, taste, and adjust as needed until you achieve a complex, subtly sophisticated, not-too-sweet lemonade that’s irresistibly refreshing.
