It’s Heat Week, and the temperature is unbearable! All we can think about is jumping into a pool and staying cool until September. But since we still have work to do, here’s some summer content to keep you refreshed: from icy cocktails to tips on avoiding the heat, we’ve got you covered.
Fortunately, you can whip up a mini cobbler in under five minutes with just a microwave. It’s versatile enough for any fruit, though I prefer berries, which only need a quick rinse. To create this perfect summer treat with a warm biscuit topping, gather the following ingredients:
1/2 cup of your favorite fruit, sliced if necessary (stone fruits, I’m talking to you!)
1 tablespoon + 1 teaspoon of white sugar
1 teaspoon of cornstarch
1/4 teaspoon of vanilla extract
1/4 cup of baking mix (like Bisquick)
1 tablespoon of milk
Combine the fruit, one tablespoon of sugar, cornstarch, and vanilla in a mug or ramekin. Make sure your container has tall enough sides to contain any bubbling fruit. In a small separate bowl, mix the baking mix, remaining sugar, and milk into a dough, then drop it on top of the fruit. Microwave for 90 seconds to two minutes until the fruit begins to bubble. Top with cinnamon and serve with ice cream, whipped cream, or a chilled glass of milk.
