What exactly are stroopwafels?
Stroopwafels are made from a delicate, sweet dough that is pressed into a special waffle iron. These ultra-thin waffles are carefully split in half, filled with a gooey caramel filling, and then resealed. As the caramel sets, it creates a chewy, malty treat. While fresh stroopwafels are incredibly tasty, the process of making them can be quite intricate—handling fragile waffle dough, ensuring it doesn’t burn, and preparing the caramel filling requires precision. You can enjoy them as they are or soften them by placing them over a steaming cup of coffee or tea.
I decided to blend two beloved treats from Italy and Latin America to create an easier version of this Dutch delicacy. This might be one of the simplest shortcuts ever. Just head to your local grocery store, grab a jar of dulce de leche, and pick up a pack of pizelles. These delicate cookies typically come in sets of 24, and you’ll find varieties like vanilla, anise, and chocolate. While all are delicious with caramel, vanilla pizelles will most closely mimic the original stroopwafel flavor. You’ll typically find these cookies in the cookie aisle, while the dulce de leche can usually be located in the 'international' section or next to the condensed and evaporated milk.
Open your jar (or can) of dulce de leche and tear open a pack of pizelles. Spread a thin layer of the caramel on one pizzelle using the back of a spoon, ensuring the caramel almost reaches the edges of the cookie. The pattern of the pizzelle should still be visible through the caramel. Next, place another pizzelle on top. Gently press them together, pushing the caramel out to the edges.
