I enjoy when food trends breathe new life into familiar snacks, such as creating a Pop-Tart ice cream sandwich or infusing gummy candy with unique flavors. One of the latest viral TikTok trends involves wrapping ice cream in Fruit Roll-Ups, a revival of the 80s lunch box classic. It might be a sugary overload, but it's undeniably a fun and satisfying way to experience this old-school snack.
The true magic of this sweet snack lies in both its bold flavor and the unexpected shift in textures. The cold ice cream alters the once soft, flexible Fruit Roll-Up into a crisp, rigid shell. Upon biting, the ice cream melts, and the Roll-Up cracks into pieces in your mouth. As you chew, the candy regains its original chewy, stretchy consistency, making for a surprising sensory experience. While it seems simple—unwrap, scoop, and roll—there are a few ways to make this quirky snack even more enjoyable.

Roll it the simple way
When it comes to ice cream, one thing is certain: it melts faster than you think. To avoid the rush, make sure your Fruit Roll-Up is already unwrapped before you grab the ice cream. Scoop a few dollops in a straight line across one edge of the Fruit Roll-Up and you’re ready to roll. You might think the best method is to start from one edge and curl it over the ice cream, pushing it, much like you would with a jelly roll or cinnamon buns. But the melting ice cream makes this tough, as the smooth Roll-Up won't stick and just slides off. Instead, try lifting both edges of the Fruit Roll-Up from either side of the ice cream and let gravity assist. Create a little cradle and fold one end over the ice cream. Any excess Roll-Up can be folded over the top.

Add additional ingredients
There are so many fun flavor combinations you can try with ice cream and Fruit Roll-Ups. For example, a classic pairing of strawberry and vanilla, or perhaps sour Roll-Ups with a bold black cherry flavor. I also experimented with tropical-flavored Fruit Roll-Ups and raspberry cheesecake. To elevate your ice cream roll, get creative with textures and flavors. Try adding slices of tangy mango, fresh blueberries, or even a sprinkle of crunchy chocolate chips, chopped nuts, crispy bacon, or sprinkles. You can also add a swirl of peanut butter, chocolate sauce, or your favorite jam for a delicious twist.
Bulk prep and freeze ahead
Once your ice cream tube is rolled and the Fruit Roll-Up starts to harden, you can indulge right away and enjoy the delightful crunch of the shell paired with the smooth ice cream inside. However, be warned, as the ice cream might start to overflow from the other end. If you’re not in a rush, wrap the tube in foil and place it in the freezer for about 20 minutes to firm it up. For those who can’t get enough of this treat, make a batch in advance. Lay out four (or more) Fruit Roll-Ups on a tray, fill them, and roll them up. Once done, freeze the whole tray for 30 minutes until the ice cream sets, then transfer the rolls into a zip-top freezer bag. Keep them stored in the freezer and ready to enjoy anytime.
