2 ½ pounds chicken wings

3 teaspoons kosher salt, divided

¾ teaspoon freshly ground black pepper, divided

¾ ounce Parmesan cheese, grated (about ½ cup)

¼ cup olive oil, plus extra for greasing the grill grates

¼ cup fresh flat-leaf parsley, finely chopped

½ teaspoon lemon zest with 2½ Tbsp. fresh juice (from 2 lemons)

1 large clove garlic, grated

½ teaspoon sugar
Instructions

Preheat the grill to high (450°F to 500°F). Toss the wings with 2 teaspoons of salt and ½ teaspoon of pepper in a large mixing bowl. Arrange them on the oiled grill grates and cook, turning often and covering, until browned and a thermometer reads 170°F in the thickest part, about 12 to 16 minutes. Transfer the wings to a bowl, sprinkle with grated cheese, and toss to coat.

In a small bowl, mix together olive oil, parsley, lemon zest and juice, garlic, sugar, and the remaining 1 teaspoon of salt and ¼ teaspoon of pepper. Drizzle this mixture over the wings and serve.
