In this recipe, steamed broccoli florets are combined with a creamy Gruyère sauce and baked for 35 minutes. The most challenging aspect? Waiting 10 minutes for the golden, bubbling gratin to cool after it emerges from the oven. 2 large bunches of broccoli, coarsely chopped (approximately 12 cups)

4 tablespoons unsalted butter (½ stick)

¼ cup all-purpose flour

2 cups whole milk

2 cups shredded Gruyere cheese (8 ounces)

Preheat the oven to 375°F. Fill a large saucepan with 1 inch of water and place a steamer basket inside (or use a large pot with ½ inch of water) and bring to a gentle simmer.

Add the broccoli to the steamer basket, cover, and steam until just tender, about 3 to 4 minutes, then transfer to a large bowl.

In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook, stirring constantly, for 2 minutes (avoid browning).

Gradually whisk in the milk and simmer until the mixture thickens slightly, about 3 to 4 minutes.

Remove from heat and mix in 1 cup of Gruyere cheese, ½ teaspoon of salt, and ¼ teaspoon of pepper. Combine this sauce with the steamed broccoli.

Transfer the broccoli mixture to a 3-quart shallow baking dish and top with the remaining 1 cup of cheese. Bake until bubbly and golden brown, 35 to 40 minutes.
