
Although I enjoy cooking wholesome, balanced meals, I still indulge in snack culture. This includes fast food, salted gummy candy, and the endless variety of frozen potatoes. Believe it or not, you can actually wrap snack potatoes in eggs (a wholesome ingredient!) and make them into a proper meal. But honestly, you don’t need any justification other than your love for frozen potatoes to whip up this cheese fries omelette.
Inspired by Claire Lower’s brilliant frico fries roll-up, the cheese fries omelette lets me bundle a few of my favorite ingredients into one perfect breakfast roll. Whether you have fresh fries, curly fries from the diner, cold leftover steak fries, or frozen shoestring fries, you can’t go wrong. Keep it basic with some American cheese and shoestring fries wrapped in a fluffy omelette, or get adventurous by adding bacon, hot sauce, brie, or chopped pickles.

Begin by scrambling two or three eggs with a pinch of salt in a measuring cup. I like to add a dash of my favorite spice, so today I used onion powder and dried parsley. Heat a half tablespoon of butter in a frying pan on medium-low, allowing it to coat the pan. Pour in the eggs and let them set to your preference, just like you would with any omelette. Add a couple of slices of American cheese—two worked for me, but if you like it cheesier, feel free to cover the surface. Let the cheese melt slightly; this will help the fries stay in place. Take a handful of French fries and arrange them in the center, making sure they’re facing the same way. They should be laid out perpendicular to the way you’ll roll the egg. To clarify with directions, roll the omelette North-South, so the fries should line up East-West. This ensures no crispy edges will stick out when you roll it up. Once rolled, gently press the omelette and serve.

I used crispy shoestring fries that were originally frozen and air fried. These fries were fantastic, but their extra crunch sometimes made them a little tough to cut. While it didn’t affect my enjoyment, the texture contrast might be more appreciated by others. For a softer option, you could try crinkle cut fries or tater tots with their fluffy centers. The cheese can be adjusted to your taste. If you prefer a gooey cheese fries omelette, go for a melting cheese like havarti, taleggio, fontina, or even jarred cheese dip. For the ultimate breakfast fries experience, serve them with ketchup, mayo, or a splash of malt vinegar and a sprinkle of salt for added flavor.
