
Campari, characterized by its bold, bitter citrus undertones and rich, almost medicinal profile, isn't typically seen as a summer drink. That title usually goes to Aperol. However, Campari can be just as refreshing in the summer. While it shines in a spritz, it can also be transformed into a fruity, chilled after-dinner drink by blending it with frozen berries.
As you might know, shaking Campari with ice works wonders; it aerates and slightly dilutes the liqueur. When combined with frozen berries, it takes on a summery flavor and a stunning, jewel-like color.
Frozen berries are ideal for this recipe, not fresh ones. They help chill the drink effectively and break down more easily due to their frozen state. (The water inside expands when frozen, breaking the fruit's cell walls.) Shake Campari with the berries and a bit of simple syrup to infuse the flavors, then add ice and shake again to chill and mix. For a light, frothy drink, strain out the berry solids after the first shake, add a large ice cube, and shake vigorously once more. For a thicker, smoother texture, keep the solids in until the final strain.
Berry-infused Campari is delightful served over ice, but it can also be enhanced with sparkling wine or soda water for a spritz, or mixed into lemonade for a tangy twist. Any frozen berries work well—I prefer a blend of blueberries, raspberries, and blackberries. Strawberries are less ideal as they don’t break down as easily.
To create berry-infused Campari, gather the following ingredients:
2 ounces Campari
1/3 cup frozen berries
1/2 ounce simple syrup
Combine all ingredients in a shaker and shake vigorously for 30 seconds. For a lighter, frothier drink, strain out the berry solids, add ice, and shake again for another 30 seconds. Pour the mixture through a fine mesh sieve into an elegant glass, add more ice, and enjoy as is or top with a fizzy beverage.
