Hey there, everyone! Welcome back to another exciting session of topic picking for Will It Sous Vide?, the column where I cook whatever you suggest using my immersion circulator.
Let’s jump right in. With Christmas coming up, I’ve heard some geese are getting fat, and I’m thinking it would be fun to cook one of those geese. Actually, I’m not sure where to find a goose, but I’d love to try something festive like a ham or a rack of lamb. But if meat’s not your thing, I’ve got other ideas for you:
Tempered Chocolate: Because there's nothing better than perfectly tempered chocolate.
Peppermint Schnapps: Or any other boozy treat to enjoy.
Ribs: Someone suggested ribs last week, and I wouldn't mind giving those a shot. (I guess this is meaty too.)
Tamales: A friend of mine just returned from Arizona with masa, so tamales seem like the perfect choice.
