6 slices of bacon

1 2 to 2½ pounds of butternut squash, peeled, seeded, and diced (about 4 to 5 cups)

2 cloves of garlic, minced

1 ½ cups chicken broth

1 teaspoon kosher salt

4 ounces soft goat cheese, crumbled

1 1-pound package of cooked linguine

1 tablespoon olive oil

2 teaspoons freshly ground black pepper
Instructions

Start by cooking the bacon in a large skillet over medium heat until it crisps up, approximately 5 minutes. Remove it from the pan and place it on a paper towel, then crumble or break it into pieces and set aside. Drain all but 2 tablespoons of bacon fat from the skillet.

Add the diced squash and minced garlic to the skillet and sauté them over medium heat for 3 to 5 minutes. Pour in the chicken broth and sprinkle with salt. Cover the skillet and let it simmer for 20 to 25 minutes, stirring occasionally, until the squash becomes tender.

Mix in half of the crumbled goat cheese and stir it thoroughly. Place the cooked linguine in a large bowl. Add the sauce and toss the linguine well to coat it. Drizzle with olive oil, then top with the reserved bacon, the remaining goat cheese, and freshly ground black pepper. Serve right away.
