While saturated fats don’t always get the best health reputation, they simply consist of carbon atoms fully “saturated” with hydrogen, preventing them from forming double or triple bonds. These fats have long, straight carbon chains that can pack closely together, unlike unsaturated fats, which have kinks in their chains due to additional bonds.
When molecules settle closely together, they turn solid, melting only when exposed to heat. Unsaturated fat molecules, with their twists and bends, can’t align neatly, keeping them in liquid form even at room temperature.
