The humble egg’s adaptability is nothing short of extraordinary. While it’s already a treat with just a sprinkle of salt, it effortlessly elevates any dish with its rich, flavorful yolk and satisfying substance. Whether it's a power-packed breakfast or an elegant meal, eggs have earned their place as a kitchen staple. Here are our go-to methods for cooking them.
Fried
From runny to firm yolks, we’ve got a fried egg for everyone. Picture eggs fried in crispy cheese, or those cooked inside delicate rings of roasted delicata squash. Some are infused with fragrant herbs right in the whites, while others get a savory boost from tomato paste. Want something more indulgent? Try frying your egg in the hole of a bagel, a slice of leftover pizza, or even a pile of crispy potato chips.
Scrambled
Scrambled eggs are often overlooked, but in my view, they deserve more love. I’m a fan of both small, creamy curds and large, airy ones, especially when you toss in an extra yolk or two. The fluffiest scramble comes from using an immersion blender, which also works wonders for incorporating soft cheeses directly into the mix. If you’re not in the mood to stir, pour a cheesy blend into jars and sous vide it for smooth, velvety egg bites.
Hard-boiled
While hard-boiled eggs may not seem glamorous, they can be surprisingly decadent when prepared with care. Wrap them in miso, marinate them in tea and soy sauce, or pressure cook them to infuse the whites with a rich, nutty flavor. For an extra treat, sprinkle the yolks with a little sugar and use a torch to create a brûléed finish.
Poached
The best poaching method is often the simplest one, but that doesn’t mean you can’t get creative. Poaching an egg directly in a bowl or ramen transforms a quick snack into a filling meal, and switching from water to wine as your poaching liquid adds a delicious twist to your brunch.
