1 ¾ cups unsweetened almond milk

½ cup Greek yogurt, plain and whole-milk

3 tablespoons creamy peanut butter

1 tablespoon honey

½ teaspoon pure vanilla extract

1 ½ cups old-fashioned rolled oats

2 tablespoons chia seeds

½ cup strawberry jam

1 small banana, sliced thin (around 1 cup)

¼ cup chopped peanuts
Instructions

In a large bowl, whisk together the almond milk, yogurt, peanut butter, honey, and vanilla. Stir in the oats and chia seeds until evenly mixed. Spoon ⅔ cup of the mixture into each of the 4 (8-ounce) glass jars with lids. Seal the jars and refrigerate them for at least 8 hours, or up to 12, until the mixture has thickened.

Once the jars are ready, uncover them and top each serving with 2 tablespoons of strawberry jam, ¼ cup of banana slices, and 1 tablespoon of chopped peanuts. Store in the refrigerator until ready to serve, or up to 3 days.
