With only one meal to cook on Thanksgiving morning, breakfast often gets overlooked. While cereal or pre-made danish are quick solutions, you can prepare something more festive, like these simple three-ingredient toaster pastries. Make them in advance, freeze, and heat them up when you're ready to serve.
To make these pastries, you'll need pie dough (store-bought works), cranberry sauce (preferably whole berry, not the jellied kind), and an egg. Roll out a batch of dough, then slice it into six even rectangles. If you're skilled with pie dough, you might even get eight.
Place about two teaspoons of cranberry sauce in the center of three or four rectangles, spreading it out while leaving a half-inch border. Then, cover them with the remaining dough pieces, pressing down gently.
Seal the edges with a fork, create three rows of small holes on top with the same fork, and brush off any excess flour. Beat an egg and brush it onto the pastries for a golden finish. Repeat the process until you've made as many pastries as you need.
Bake the pastries at 375 degrees for around 15 minutes, or until they turn golden brown. Allow them to cool to room temperature before placing the entire baking sheet in the freezer overnight for a thorough freeze. Once frozen, transfer them to a freezer bag. When you're ready to serve, pop them in a toaster oven for a few minutes, just long enough for the tops and edges to brown slightly. Serve with lots of coffee, then shift your focus back to the turkey.
