
Freshly baked, flaky biscuits are an irresistible treat—a golden, crispy outer layer with a soft, buttery interior. They’re the perfect indulgence for any carb enthusiast. Unfortunately, they lose their magic with time. A day-old biscuit, though still edible, becomes dry, tough, and unappealing. Rather than throwing out these stale biscuits, why not give them a second chance by transforming them into crunchy biscuit crackers?
Transforming Leftover Biscuits Into Crackers: A How-To Guide
I first encountered this idea from Chef Carla Hall, who uses a drop biscuit recipe to create a large log-shaped biscuit, which she then transforms into crackers. While you can certainly use fresh biscuits, I believe that repurposing stale biscuits is a fantastic way to minimize waste and create something tasty.
This method gives your biscuits a biscotti-like treatment. The word biscotti, in Italian, means ‘twice-baked,’ and that's exactly what we’re doing here. By slicing the stale biscuits into strips and baking them again, we dry them out completely and create a chance to infuse extra flavor.
This technique works with any kind of biscuit—drop biscuits, buttermilk, large, or small. Start by placing the old biscuits on a cutting board. Use a serrated knife to cut the biscuits vertically into quarter-inch slices. If your biscuits are especially flaky, you might need to slice them thicker so they hold up. Arrange the slices in a single layer on a parchment-lined baking sheet. If you wish to season them, sprinkle on salt, za’atar, everything bagel seasoning, crushed fennel seeds, or sesame seeds, and lightly spritz with oil. Bake at 350°F for 10 minutes.
Once the biscuit slices are out of the oven, flip them over. Bake for an additional 7 to 10 minutes, or until golden and crisp. Just like cookies, use a fish spatula to lift the crackers onto a wire rack to cool. Allow them to cool completely for about 15 minutes.
These crunchy treats are perfect for a charcuterie board. Top them with cheese and mustard, or pair with sliced fruit and honey. You can even make tiny sandwiches with cured meats between two crackers. Serve with dips or simply snack on them straight from the bowl like an adult.
