1 pound extra-large raw shrimp, peeled and cleaned

4 cups packed baby arugula

2 tablespoons fresh lemon juice (from 1 lemon)

Heat 2 tablespoons of olive oil in a large, deep skillet over medium heat. Add the chorizo and cook, stirring frequently, until it starts to brown and crisp, about 4 minutes. Stir in the shallot and cook until aromatic, about 1 minute.

Add the cherry tomatoes, chickpeas, wine (or broth and lemon juice), and salt. Bring to a simmer over medium-high heat. Partially cover and cook, stirring occasionally, until the tomatoes begin to soften and break down, 6 to 8 minutes. Uncover and gently crush the tomatoes with a wooden spoon.
