-
1 pound linguine or spaghetti pasta
-
6 pieces of bacon, chopped
-
4 egg yolks
-
1 cup shredded Parmesan cheese
-
½ teaspoon kosher salt
-
¼ teaspoon ground black pepper
-
½ cup chopped fresh flat-leaf parsley
Instructions
-
Prepare the pasta following the instructions on the package.
-
While the pasta cooks, fry the bacon in a large skillet over medium heat. Remove the bacon and place it on paper towels to drain. Keep the bacon drippings.
-
In a big bowl, whisk together the egg yolks. While whisking, add 2 tablespoons of the reserved bacon drippings. Quickly mix in the cooked pasta and Parmesan, tossing until combined. Add salt, pepper, parsley, and bacon. Serve immediately. (The pasta's heat cooks the eggs, though not completely. It may be safer for young children, the elderly, and those with compromised immune systems to avoid this dish.)
