
As a kid, I would often daydream about grocery shopping—though not the kind with my mom, which was full of rules and limitations. No, I imagined shopping alone, as an adult, for the very first time. In these fantasies, I’d fill my cart with Oreos, Ben & Jerry’s, white bread, American cheese, and those giant, plastic-wrapped croissants (ideally from Costco).
I don’t remember my first solo grocery trip, but these days I often buy all the items from my fantasy—except the croissants. Somehow, buying a dozen all-butter croissants for just one and a half people feels a bit too lavish, especially when I already have a loaf of white bread in my cart. But that’s just ‘mom thinking,’ and I’m not a mom, nor do I live with one. So, in a small act of defiance, I recently bought the croissants and made an incredibly indulgent grilled cheese sandwich with them.

Croissants make the ultimate grilled cheese bread—just flip them inside out. Expose all the delicate, buttery layers within, then brush them with even more butter. Add cheese between the two halves, placing it against the 'outside' of the croissant, and fry the entire creation in a pan.

As the croissant’s flaky layers cook, they sizzle and crisp up, offering a delightful contrast of textures. If any cheese leaks out and sticks to the pan, you can shift the bread around to collect those crispy bits, adding even more texture to your sandwich. The result is rich, indulgent, and 'buttery' in the best possible way. It’s perfect—though I might reconsider how often I buy tubs of croissants.

Inside-Out Croissant Grilled Cheese
Ingredients:
1 store-bought all-butter croissant
1-2 tablespoons of melted butter
2 slices of American cheese (preferably white American from the deli)
Cut the croissant in half and generously brush the insides with melted butter, making sure every part is covered. Heat a nonstick pan on medium and place one croissant half in the pan, cut side down. Add the cheese on top, then place the other half of the croissant, cut side facing up, on top of the cheese.
Press down on the top of the sandwich with a spatula to slightly flatten it, and cook for a few minutes until golden brown and crispy. Flip and cook the other side in the same way. Serve and enjoy immediately.
