
Meatloaf is hands down one of my favorite comfort foods. Fresh from the oven, it's fantastic, but what really excites me is turning it into a next-day meatloaf sandwich. I've enjoyed it cold, pan-seared, and even microwaved, but lately, waffled meatloaf has been my go-to obsession.
Reheating food in a waffle maker is a game-changer—it’s incredibly quick and efficient. The direct, high heat crisps both sides simultaneously, far faster than a pan or oven. Plus, the signature waffle ridges add caramelized pockets of rich, savory flavor. This method gives your meatloaf sandwich a texture reminiscent of a grilled burger, elevating it to a whole new level.

Like all waffled recipes, this one is incredibly simple. Set your waffle maker to medium heat, and once it’s ready, place your meatloaf slice slightly off-center to reduce the risk of cracking. Press down gently, understanding that the lid may not fully close—forcing it could damage your waffle maker, and that would be unfortunate. Allow the meatloaf to cook until heated through and golden brown, then carefully lift it out using chopsticks to navigate the grooves. Place it on a slice of bread, or better yet, on a slice of bread layered with melty American cheese. Finish with pickles, onions, or your favorite toppings, and pair it with an ice-cold, fizzy drink. (I’m partial to Diet Coke, but any bubbly beverage will complement it perfectly.)
