Frozen yogurt popsicles don’t often rank high on my list of favorite frozen desserts. Created as a sneaky way to convince kids they’re enjoying 'dessert,' these frozen sticks of fruit and yogurt often miss the mark when it comes to the rich texture and indulgent flavor we crave. But everything changes when you replace regular yogurt with labneh, which is far thicker and more satisfying.
Labneh is a yogurt cheese that has been strained to perfection, blending the best qualities of sour cream, cream cheese, and tangy yogurt. Imagine a Venn diagram with these three items—labneh would be perfectly placed in the center.
Labneh packs such a flavorful punch that it hardly needs anything else. Combine it with premium fruit preserves and freeze it, and you’ve created a yogurt pop with the creamy richness of cheesecake. Alternatively, mix it with tahini and honey (and perhaps a sprinkle of sesame seeds), and you’ve crafted a sophisticated, subtly savory dessert perfect for adult palates. To make four large yogurt pops, you’ll need:
2 cups of labneh (store-bought or homemade)
1/4 cup of flavorful mix-ins (tahini, fruit preserves, nut butter, or macerated fruits)
2 tablespoons of honey (use less or skip it if you’re adding a sweet mix-in like fruit preserves)
Combine all the ingredients in a mixing bowl and stir until well mixed. Taste the mixture and, if desired, add more honey or any other mix-ins. Pour the mixture into popsicle molds, using a funnel and chopstick for assistance if necessary, and freeze overnight. When ready, run warm water over the molds to help loosen the pops (if needed), and indulge in the creamiest, tangiest yogurt-based treat you've ever had.
