Pie dough that's perfectly crafted is far too valuable to discard, and any leftover bits from trimming or decorating deserve to be treated with care. Instead of throwing them away or storing them in the freezer for a “future project” that will never happen, you can transform them into crispy pie fries.

While I’m not the biggest fan of calling non-potato foods “fries,” I’ll make an exception for pie dough. (Carrot “fries,” though, should be left alone.) Pie fries are the perfect snack, a quick breakfast treat, or a delightful companion to your afternoon coffee break, and they couldn’t be easier to make. To prepare them, you’ll need:
Pie dough scraps, sliced into strips about three inches long and half an inch wide
An egg white, beaten until frothy
A blend of equal parts sugar and pumpkin pie spice (or any spice you prefer)
Brush the egg white wash onto the dough strips, then dust them with the pumpkin spice sugar. Gently shake off any excess, and bake at 350℉ for 10-12 minutes, or until the dough fries are crisp. Do not pair them with ketchup. (Whipped cream, however, works just fine.)
