I'll soon be switching to a steady diet of cookies and sprinkles, but for now, it's turkey all the way. My go-to way to use up leftover turkey is to create a buffalo turkey pizza, and I think you’ll love it, too.
It’s been a few days, and you probably still have leftover turkey in your fridge. If you're tired of turkey soup, this might be the simplest way to refresh your tastebuds. It requires minimal effort, and you can use any amount of turkey you have. Whether you have just a few ounces left or a full turkey breast with two thighs, it's all perfect for this pizza topping. You can’t go wrong with it!
How to make a buffalo turkey pizza

With turkey in hand, all you need is a pizza and buffalo sauce. I grabbed a DiGiorno cheese pizza—I haven't found a better frozen pizza yet—and a bottle of Buffalo Wild Wings medium buffalo sauce. Frozen pizzas are great for this because they're partially cooked already, which makes the crust sturdy enough to handle a pile of toppings, like eight ounces of turkey coated in buffalo sauce. There are many buffalo sauce options in your grocery store, usually next to the hot sauces, but if you're unsure, try the Buffalo Wild Wings sauce. I love its thick texture and subtle heat with a touch of celery flavor. It's a great combination.
Preheat your oven as per the package instructions and remove your pizza from its box. Chop or shred your leftover turkey. It doesn't need to be heated since it will go into the oven. Put the turkey in a bowl and add enough buffalo sauce to cover it evenly. I recommend erring on the side of extra sauce to avoid any dry spots. I used about a cup of turkey and a quarter cup of sauce, but this will vary based on the sauce and turkey amounts you have.

Spoon the buffalo turkey mixture over your frozen pizza, breaking up any large clumps and spreading it evenly across the surface. Feel free to add extra cheese, red onion slices, or even a drizzle of more buffalo sauce like I did. Bake according to the package instructions, or until it reaches your desired level of crispiness. Top with additional sauce, chopped chives, or scallions and dig in.
