
While I adore eggplant, I prefer to keep things simple. I rarely soak or salt it, not out of arrogance, but sheer laziness. My go-to method has always been quick, high-heat frying with a sprinkle of salt, but my waffle maker is now challenging that approach.

Using a waffle maker for vegetables is a game-changer. It eliminates the need for an oven or stovetop, saves energy, and produces minimal heat. The dual-sided cooking ensures even preparation without flipping, and the entire process is completed in just minutes.
Mastering the Art of Waffling Eggplant
Preparing eggplant for the waffle maker is simple. Heat your waffle iron to high, cut the eggplant into 1/4-inch thick slices (peeling is optional), and lightly coat each side with olive oil. Sprinkle salt on both sides, then place the slices in the center of the waffle maker and close the lid.
Initially, the lid won’t close completely. Press down gently on the waffle maker every 10 seconds, avoiding excessive force, until it shuts fully. Cook for 2-3 minutes until the eggplant is tender and charred. If it sticks, use a wooden chopstick to carefully release it.
For finishing touches, a blend of oil, alliums, and herbs works wonderfully. A.A. Newton previously shared some excellent recommendations:
Sesame oil, garlic, ginger, scallions, gochujang, and rice vinegar
Olive oil, lemon juice, garlic, capers, olives, and parsley

A simple dip or spread combining labneh, lemon juice, and za’atar is an excellent choice, or you can use the waffled eggplant in a sandwich or blend it into a dip. (Last night, in a post-workout, vape-induced daze, I whipped up a dip this way, and it turned out surprisingly well.)
