This could be my favorite way to prepare mozzarella sticks. The heat from the waffle iron presses the cheesy tubes flat, maximizing the surface area for crispiness. Some cheese inevitably escapes from the breading, as is typical with mozz sticks, but there’s one key difference: instead of oozing out and forming sticky blobs, the cheese crisps right on the waffle iron, turning into delightful little crunchy frico bits.

Once the sticks are cooked in the waffle iron, you can plate them however you prefer. I drizzled some jarred pizza sauce over mine, topped it with a generous sprinkle of shaker parmesan, and it was just as delicious as you’d expect. If I had fresh basil on hand, I would have added some of that too.

For an adventurous twist, you could turn your mozzarella waffles into an eggs Benedict base, or even cook the eggs in marinara sauce, shakshuka-style, before slicing the entire dish onto the cheesy foundation. A burger on top could also be a fun idea, although I know that's leaning into 'stunt food' territory.
Choosing the perfect topping for your mozzawaffle might be trickier than making it. To prepare, simply grab a few frozen mozzarella sticks and a waffle iron. Heat the iron to medium, then arrange at least three mozzarella sticks in the center. Close the iron and, using a dish towel to avoid burns, gently press down every 30 seconds until the sticks soften enough to allow the iron to close fully. Cook for about three minutes, until the breading turns golden and crispy, then serve and enjoy right away.
