Steps
Use the Undo icon

You can find the Undo and Redo icons in the Markup tool. Tap the pen icon at the bottom of the note you have open to access Markup, which contains two arrow icons at the top of the screen.
- Tap the left arrow to undo your last change. You can undo multiple actions by tapping the icon again (if it’s highlighted).
- Tap the right arrow to redo the most recent change you just made.
Swipe with three fingers

Swipe left with three fingers and tap on Undo. If you accidentally overwrite or delete a section of text in your note, this quick swipe left with three fingers will help you undo the last action. This gesture is also effective in other apps, including Pages.
- If you change your mind about undoing the last action, swipe three fingers to the right and tap Redo to restore it.
Double tap with three fingers

Tap the screen twice quickly with three fingers. This action will bring up an editing menu with one arrow pointing left and one pointing right on each side.
- Tap the left-pointing arrow to undo the last action.
- Tap the right-pointing arrow to redo the action if you change your mind.
Shake to undo

Shake your iPhone or iPad and select Undo. This action will undo your most recent edit to the open note. If you change your mind, you can shake your device again and select Redo Typing.
- If you accidentally trigger Shake to Undo, you can disable the feature. Just open the Settings app, go to Accessibility > Touch, and turn off "Shake to Undo."
Keyboard Shortcuts

Press ⌘ Cmd+Z to undo on an external keyboard. This shortcut quickly undoes the last action in the iOS Notes app, similar to how it works on Mac. If you change your mind, you can press Shift + Cmd + Z to redo the action you just undid.
Recover Deleted Notes

If you accidentally deleted a note you still need, you can recover it. As long as it hasn't been more than 30 days since you deleted the note in the Notes app, you can find it in the Recently Deleted folder.
- In the Notes app, tap the back button in the top-left corner until you see the "Folders" menu.
- Tap Recently Deleted under "iCloud."
- Tap Edit in the top-right corner and select the note you want to recover.
- Tap Move and then tap Notes to restore the note.
