Choose between fresh or frozen shrimp. Most markets sell both fresh and frozen shrimp.
- If selecting fresh shrimp, the meat will be opaque white, and the shell will have a light gray color. Look for shrimp that isn't leaking water.
- Frozen shrimp may come pre-cooked or raw. This guide is intended for raw shrimp.

Choose shrimp with or without shells. Fresh shrimp is often sold peeled. If you buy shrimp with shells, you'll need to peel them yourself.
- You can peel shrimp before or after cooking. Many find it easier to peel cooked shrimp. Cooking shrimp with the shell on helps preserve the rich flavor.
- To peel shrimp, grip the legs and tear them off. Peel the shell along the curve of the shrimp's body.
- You can use shrimp shells to make shrimp broth.
Remove the shrimp vein. It’s easier to remove the vein after peeling the shrimp.
- Use a sharp knife to make a slit along the groove on the shrimp’s curved body. This groove will reveal a dark brown or black vein, which is the shrimp's digestive tract. Use your fingers, a fork, or a knife to pull the vein out and discard it.

Boil the shrimp
Prepare the shrimp. Take the shrimp out of the fridge 20 minutes before cooking. Rinse the shrimp under cold water and let them come to room temperature.

Bring the water to a boil over high heat.

Drain the shrimp. Transfer the shrimp into a strainer or colander to drain the water. Serve while the shrimp are still warm.
- If you haven't peeled the shrimp before boiling, you can bring them with their shells on for people to peel themselves, or you can peel the shrimp after boiling and then serve it at the table.
Sauté the shrimp

Prepare the shrimp. Take the shrimp out of the fridge and rinse them with cold water. Shake off excess water.
- Peel the shrimp if you want to sauté them without shells.
- Leave the shells on if you prefer to peel them after sautéing.
Heat the pan over medium heat. Add a spoonful of oil and swirl the pan to coat it evenly with the oil.
Place the shrimp in the pan. Arrange the shrimp in a single layer, ensuring that they don't overlap.
Sauté the shrimp for about 2-3 minutes. The side of the shrimp touching the pan will turn pink.
Flip the shrimp and continue sautéing. Ensure all the shrimp are turned over. Sauté for another 2-3 minutes, or until the other side turns pink. Cooked shrimp will turn a bright pink, and the flesh will become translucent rather than opaque.

Turn off the heat. Serve and enjoy while the shrimp are still hot.
Grilled Shrimp

Prepare the grill. Set up a charcoal grill or preheat a gas grill to medium heat.

Prepare the shrimp. Remove the shrimp from the refrigerator and rinse them under cold water. Shake off any excess water.
Skewer the shrimp. Insert the skewer from the tail to the thickest part of the shrimp's body.
- You can use either wooden or metal skewers. If using wooden skewers, soak them in water for 10 minutes before threading the shrimp to prevent them from burning.
- Feel free to add sliced onions, bell peppers (green and red), or other vegetables alongside the shrimp on the skewer.
Brush oil onto the shrimp. Apply a thin layer of olive oil on both sides of the shrimp. You can also sprinkle some salt and pepper to enhance the flavor.
Place the shrimp skewers on the grill. Grill one side for about 3-4 minutes. Flip the shrimp and grill the other side for another 3-4 minutes. The shrimp will turn bright pink and the flesh will become translucent when done.

Remove the shrimp from the grill. Take the shrimp off the skewers and serve while still hot.
