Preparing and Cooking Asparagus
Preheat the oven to 230°C. While waiting for the oven to heat up, you can prepare the asparagus.

Wash the asparagus thoroughly. You can save smaller stalks for other recipes – as they tend to shrink further when grilled. Larger stalks are more suitable for this cooking method.
Trim the tough ends of the asparagus. Use a knife to cut off 2.5 to 5 cm from the bottom or snap them off by hand. Removing the tough parts leaves only the tender stalks.
- Some prefer peeling the stalks, while others find it unnecessary. If desired, peel the stalks clean.
Drain the asparagus if needed. To ensure the asparagus roasts instead of steaming, remove any excess water before cooking – as this is a dry-roasting method. Pat the asparagus dry with a paper towel or roll it on a clean cloth.
Grilling Asparagus
Line a baking sheet with aluminum foil. If you don’t have a baking sheet, you can use a roasting pan. When using a roasting pan, there’s no need for additional foil.
- Simply discard the foil afterward and skip the cleanup step to focus on the delicious dish coming out of the oven. This way, you can enjoy your meal without much cleaning.
Coat the asparagus evenly with olive oil by rolling it. Use 1 to 2 tablespoons (15 to 30 ml) of extra virgin olive oil for this step. If it seems insufficient, add more until the asparagus is fully coated.
- Do this directly on the baking sheet! There’s no need to dirty another dish. Use a fork or tongs to roll the asparagus back and forth, ensuring the oil is evenly distributed.
Arrange the asparagus in a single layer on the baking sheet. This ensures even cooking. If the asparagus is stacked, it won’t cook uniformly.
Sprinkle salt, pepper, and other seasonings to taste over the asparagus. Freshly ground sea salt and black pepper are ideal. Using fresh seasonings enhances the flavor significantly.
- Minced garlic is also a great addition to grilled asparagus. If you enjoy garlic, add a few cloves of finely minced garlic to the dish.
Place the asparagus tray into the preheated oven. Roast the asparagus for 8 to 10 minutes. If you’re using thicker or heavier asparagus, it may require more time. Pay close attention during roasting and check for doneness after 10 minutes.
- It’s best to position the asparagus tray on the middle rack of the oven. This ensures even heat distribution.
- Halfway through the cooking time, use a fork to flip the asparagus or shake the tray.
