Cod is a white-fleshed fish known for its delicate taste and firm texture. While there are many ways to prepare cod, grilling is the quickest and easiest. Whether you prefer its natural mild flavor, a more robust taste with vegetables, or a crispy coating of breadcrumbs, grilling brings out a variety of flavors in the fish.

Grilling Cod Fish (Simple Method)

Wash and thaw the cod fillets. After washing and thawing, gently pat the fish dry. Try to maintain an even thickness in the fillets to ensure even cooking when grilling in the oven.

Preheat the oven to 180ºC and prepare the baking tray. Line the tray with parchment paper to prevent the cod from sticking during the grilling process.

Sprinkle salt and pepper on both sides of the fish. In a small bowl, mix 1-2 teaspoons of salt and pepper, then apply the mixture to both sides of the fish. Sprinkle a little extra on top. There is no exact amount of salt and pepper that must be used, so feel free to start with a little and add more before serving. Next, arrange the cod fillets on the baking tray.
- If available, use coarse or sea salt instead of refined salt. The larger salt crystals dissolve slower, resulting in a more evenly distributed flavor for the fish.

Mix butter or margarine with lemon juice. In a small bowl, combine 1 tablespoon of butter, lemon juice, and a pinch of onion powder or garlic powder.
- Now is a great time to add any additional spices you prefer. Try chili powder, paprika, and/or cayenne pepper to spice up the cod, or oregano, rosemary, thyme (bay leaves), and/or basil for a flavorful Italian herb blend.
- While olive oil can be used in place of butter, the fat in butter helps keep the fish tender and flaky.

Spread the butter/margarine mixture over the cod fillet. Drizzle a little of the mixture over the fish, then use a silicone brush to evenly spread it. During grilling, the butter will melt into the fish, creating a tender, flaky texture.

Grill the fish for about 15-20 minutes. Once done, the cod will flake easily with a fork. When you cut into the fish, it should be flaky but not dry or crumbly.

Customize your grilled cod. You can follow this recipe to add a new twist to your cod dish:
- Cook the cod with chopped vegetables such as 1 large tomato, 1 green bell pepper, 1 yellow squash or zucchini, 1/2 cup of Kalamata olives (pitted and halved), and garlic. Sauté all the vegetables with 1 tablespoon of olive oil, then place them around the cod fillet while grilling. Cook everything at once.
- Chop 1/2 cup of fresh parsley and mix it into the butter before dipping the fish.
- Melt the butter and dip the cod fillets into it to soak up the flavors. Afterward, you can coat the fish in flour to create a light, crispy crust.
Grilled Cod with Breadcrumb Coating

Rinse the cod fillets and let them drain. It's best to buy fillets that are similar in size and thickness to ensure even cooking at the same temperature, preventing some pieces from being undercooked or overcooked.

Preheat the oven to 220ºC and line the baking tray with aluminum foil. The foil will prevent the fish from sticking to the tray. If you don’t have foil, you can lightly coat the tray with olive oil or use a non-stick cooking spray.

Mix breadcrumbs and seasonings in a small bowl. Combine 1-1/2 cups of breadcrumbs (regular breadcrumbs for a smooth texture or Panko for a crispier crust) with 1 teaspoon of salt, black pepper, 1/3 cup of chopped fresh cilantro, 1/4 cup of chopped green onions, 1 teaspoon of garlic powder, and any spices you prefer. Stir everything together and set aside.
- You can customize the ingredients for this breadcrumb mixture, but make sure to include the 'essential' ingredients—breadcrumbs and salt.
- If you want a spicier kick, add 1 teaspoon of chili powder, paprika, and/or cayenne pepper. For an herbal touch, try adding 1 teaspoon of oregano, rosemary, thyme, and/or dried basil.

Place 4 tablespoons of butter in the microwave and melt it. Cut the butter into small cubes to help it melt faster, and microwave for about 30 seconds. The butter should just melt into a liquid, not get too hot. Once melted, mix the butter with the juice of 1 large lemon.

Dip the cod fillets into the melted butter and breadcrumb mixture. Dip each piece of cod into the melted butter, ensuring both sides are coated. Then, dip the fish into the breadcrumb mixture, pressing gently to ensure the breadcrumbs cover the fish completely. Place the coated fillets on the prepared baking tray. Once all the fillets are arranged, drizzle any remaining butter mixture over the top.

Grill the fish for 12-15 minutes. The fish should be tender, flaky, but still firm when removed from the oven. If the inside still looks slightly translucent, continue grilling for an additional 2-3 minutes. Finally, garnish the fish with a slice of lemon, a sprig of fresh cilantro, and enjoy your meal.
