Preparing Tilapia for Grilling

Select tilapia at the market or grocery store. For the best grilling results, each fillet should be at least 2.5 cm thick. Additionally, choose fish that have bright, clear eyes and little to no "fishy" smell. When buying tilapia fillets, make sure the packaging is free from water, and press gently to check if the meat is firm and elastic.
- The simplest way to determine the freshness of tilapia fillets is by its scent. Most seafood carries a scent that reminds you of the ocean. Opt for fish with a fresh, slightly fishy smell—not too strong or pungent like musk.
- If fresh fish isn’t available, frozen tilapia is a good alternative. Ensure that the frozen fish doesn’t have a strong fishy odor and is packaged in moisture-resistant bags. Avoid fish with white or black spots, or those that appear dried out or have ice crystals on them, as these indicate improper storage.

Immediately place the tilapia in a sealed bag in the refrigerator after purchasing. Only refrigerate the fish if you plan to cook it within 1-2 days. If you plan to keep it longer, freeze the fish at -18°C.
- If you bought frozen tilapia or intend to freeze it after purchase, you must defrost it in the refrigerator for at least 24 hours before grilling to preserve its fresh taste and texture.

Remove the fish from the bag and rinse it thoroughly. Use cold water for washing the fish, never warm or hot water, to prevent bacterial growth. Pat the fish dry with a paper towel before marinating.

Coat the fish with oil and marinate. Rub a little olive oil on both sides of the fillet before grilling. Marinate the fish according to your recipe choice. For a fresher, tastier tilapia dish, apply olive oil and sprinkle salt and pepper. You can also use the following marinade suggestions:
- Lemon and garlic. Mix lemon juice with melted butter or olive oil. Add fresh garlic or garlic powder, salt, and pepper to the mixture. Coat both sides of the fillet with the mix.
- Soy sauce and five-spice powder. Sprinkle five-spice powder on both sides of the fish fillet. Then, mix soy sauce with brown sugar in a 1:1 ratio and marinate the fish in it.
- Caraway seeds, garlic, and lemon. Combine caraway seed powder, garlic, and lemon in a bowl and mix well. You can add chili powder if you prefer a spicier grilled tilapia.
Grill the tilapia

Spray a non-stick solution on the grill rack. This step prevents the fish from sticking and breaking apart during grilling.

Preheat the grill with medium flame before cooking the fish. If you're unsure when the grill has reached the right temperature, you can preheat the oven with a small flame instead of a large one to avoid burning the fish during grilling.

Place the fillet on the grill. Grill each side of the fish fillet for about 3-5 minutes. It’s best to cook with a medium or low flame. Avoid letting the flames touch the fish, as this can burn it.

Use a spatula to flip the fish. Gently slide the spatula under the fish fillet to avoid breaking it apart. Lift the fish and flip it over. Grill for an additional 3-5 minutes.
- During grilling, avoid flipping the fish too often, as this can cause the meat to fall apart. It’s recommended to flip it only once.

Check if the fish is fully cooked. Tilapia is cooked when the flesh turns opaque and white with no liquid running out.
- You can use a small knife to make a cut in the thickest part of the fish. If the flesh is opaque, it means the fish is done.

Storing Grilled Tilapia Fish

Wrap the tilapia fish. You can use aluminum foil, plastic wrap, or specialized food storage wrap to pack the fish. Note: avoid using regular plastic wrap if you plan to freeze the fish.
- The fish can also be stored in an airtight container with a lid.

Place the wrapped fish into a sealed plastic bag. Try to push out as much air as possible from the bag. If you're freezing the fish, use a food-grade freezer bag designed for freezing purposes.

Storing Tilapia Fish. It’s best to keep the fish in the fridge for up to 3-4 days. If you freeze it, you can store it for 2-3 months and still maintain its freshness.
