Steps
Dairy-Free French Toast
Slice day-old bread into thick pieces. This recipe uses enough mixture for bread slices about 2 cm or 2.5 cm thick.
Whisk eggs, vanilla, sugar, and cinnamon. Crack the eggs into a shallow bowl and whisk until they turn light yellow and no streaks remain. Add vanilla, sugar, and cinnamon, then continue whisking.
Heat a non-stick pan over medium heat. If you don’t have a non-stick pan, coat the bottom with 1 tablespoon (15 g) of butter or coconut oil. Wait until the pan is hot enough to make a water droplet sizzle.
Dip a bread slice into the mixture bowl. Dip one side first, then flip to the other. Soak the bread in the mixture for a few seconds to fully absorb it. Lift the slice and let excess mixture drip off before cooking.
Place the bread in the pan and cook each side for 2-4 minutes. Cook for 2-4 minutes, then flip with a spatula and cook for another 2-4 minutes. The toast is ready when it turns golden brown and crispy.
- If the pan is large enough, you can cook 2 slices at once, but make sure they don’t touch each other.
Transfer the cooked toast to a plate and continue cooking the remaining slices. Recoat the pan with butter or coconut oil if needed. Keep the finished toast warm by covering it with a clean towel.
Enjoy the freshly cooked toast. You can serve the toast as is or garnish it with sliced bananas or fresh berries. Drizzle some maple syrup on top if desired.
Plant-Based Milk French Toast
Slice the bread into 2 cm thick pieces. Day-old bread works best for this recipe. The coarser and heartier the bread, the better!
Whisk the eggs in a shallow bowl. Continue whisking until the eggs are smooth, light yellow, and streak-free. You can whisk by hand with a whisk or use a hand mixer.
Add coconut milk, sugar, vanilla extract, and salt to the egg bowl. Use a whisk to mix all ingredients again until smooth and evenly colored.
- For a more traditional flavor, you can add 2 teaspoons of cinnamon powder.
Heat the pan over medium heat. A non-stick pan is ideal, but you can use a regular pan – just coat the bottom with 1 tablespoon (15 g) of coconut oil (or plant-based butter). Wait until the pan is hot enough to make a water droplet sizzle.
Dip a bread slice into the mixture. Ensure both sides are soaked thoroughly. Lift the bread and hold it above the bowl for a few seconds to let excess mixture drip off.
Cook the bread in the pan for 2-4 minutes per side. Place the bread slice in the pan. If the pan is large enough, you can add another slice – just make sure the edges don’t touch. Cook for 2-4 minutes, then flip with a spatula and cook for another 2-4 minutes. The toast is ready when it’s crispy and golden brown.

Vegan French Toast
Chill the coconut milk beforehand. If you want to use the cream from coconut milk for vegan French toast, refrigerate the coconut milk overnight. Place the entire can in the fridge and do not shake it. You’ll need to separate the cream from the liquid.
Slice the bread into pieces about 2.5 cm thick. Day-old French bread works best. If 2.5 cm seems too thick, you can cut slices around 2 cm thick.
Blend the banana, almond milk, and spices until smooth. Peel the banana and add it to the blender first, followed by almond milk, cinnamon, and vanilla. Blend all ingredients until the mixture is smooth and creamy.
- If it’s too sweet, add ½ teaspoon of salt.
- You can also mix the ingredients by hand, but ensure there are no banana chunks left.
- If you don’t have almond milk, you can use other plant-based milks like light coconut milk or soy milk.
Pour the mixture into a shallow bowl and dip the bread. Transfer the mixture to a shallow dish and soak both sides of each bread slice. Let the excess mixture drip back into the bowl.
Heat coconut oil in a pan over medium heat. Add 1 tablespoon (15 g) of coconut oil to a large pan. Wait for the oil to melt and the pan to heat up. The pan should be hot enough to make a water droplet sizzle.
Cook the bread for 3-4 minutes per side. Place the bread slice in the pan and cook for 3-4 minutes. Flip with a spatula and cook for another 3-4 minutes. Remove when the toast is crispy and golden brown.
Continue dipping and cooking the bread. Cover the cooked toast with a clean towel to keep it warm. If the pan starts to dry out, melt more coconut oil before continuing.
Prepare coconut cream, if desired. Take the coconut milk can out of the fridge and carefully scoop out the solidified cream, leaving the liquid behind. Whip the coconut cream for 30 seconds or until smooth. You can use a mixer or a food processor with a whisk attachment.
- For a sweeter cream, add a bit of maple syrup or agave nectar.
- This step is optional, but coconut cream makes a delicious topping for vegan French toast!
Serve the vegan French toast. Place a few slices of toast on a plate and top with a dollop of coconut cream. Add some blueberries, raspberries, and/or sliced strawberries.
- If not using coconut cream, you can drizzle maple syrup or agave nectar over the toast.
Tips
- Day-old bread works best.
- If using fresh bread, slice it and let it sit on the counter for a few hours to dry out.
- You can cook a large batch on a griddle. Set the griddle to 177°C and cook for 1-2 minutes per side.
- Another way to keep toast warm is to place it in an oven set to the lowest temperature.
- Sprinkle powdered sugar over the French toast and top with strawberry slices!
- Baking sheets, cake pans, and clay pots are all suitable for mixing the dipping batter.
- Use a shallow bowl wide enough to fit the bread slices.
