KFC fried chicken is a dish beloved not only by children but also by many young adults. With its crispy texture, sweet and savory flavor from the chicken meat combined with a mild spiciness from the chili sauce, it offers an unforgettable taste. Though it might seem difficult, with just a few simple tools, your kitchen can produce perfectly crispy and fragrant chicken pieces just like in restaurants.
Ingredients
- 1kg chicken thighs and wings
- 50g wheat flour
- 20g tapioca flour
- 2 eggs
- Salt, seasoning powder, garlic powder
- 50g breadcrumbs
- Chili powder
- Ketchup or chili sauce
Steps

Wash the chicken thoroughly and make a few shallow cuts to allow the seasoning to soak in. For larger chicken thighs, briefly blanch them in hot water so that they cook through when fried. Place the chicken on a rack to drain the water, then use paper towels to pat them dry.

Season the chicken with 2 teaspoons of salt, 1/2 teaspoon of seasoning powder, and 1/2 teaspoon of garlic powder. Mix well and marinate for 3 to 4 hours for the flavors to penetrate. You can cover it with plastic wrap for better flavor absorption.
Combine the flour, cornstarch, and chili powder along with half a teaspoon of salt, then spread it out on a large plate.

Whisk the eggs in a separate bowl and set them aside. Pour the breadcrumbs into another plate.

Next, place the flour mixture into a plastic bag or a plastic bowl with a lid. Add the chicken pieces, seal it, and shake to coat the chicken evenly with the flour mixture.

Coat each piece of chicken in the egg yolk.
Dip the chicken into the breadcrumbs, making sure it is fully coated so that when fried, it becomes crispy and golden all over.
Heat oil in a deep pan, filling it halfway. Once the oil is hot, gently drop the chicken pieces in one by one. Fry until golden brown and crispy, then remove and place on paper towels to drain excess oil.
