Biryani rice is a traditional Indian dish made with rice, vegetables or meat, and a variety of spices. This flavorful and easy-to-prepare dish is perfect for both vegetarian and non-vegetarian meals.

Ingredients
Vegetarian Biryani Rice
- 4 cups basmati rice
- 3 tablespoons ginger-garlic paste
- 5 green chilies (or fewer, depending on taste)
- 1 finely chopped onion
- 2 finely chopped tomatoes
- 2 teaspoons each of cinnamon, cloves, and cardamom
- Cashews
- 4 tablespoons cooking oil or ghee
- 2 cups chopped beans and carrots
- 2 teaspoons Garam Masala powder
- 3 teaspoons chili powder (or less, depending on taste)
- A handful of mint and coriander leaves
- Juice of half a lemon

Prepare the Ingredients

Rinse the basmati rice. Before cooking, rinse the rice thoroughly. Fill a bowl with cold water and add the rice. Gently stir the rice in one direction. Drain the cloudy water and refill the bowl. Repeat until the water runs clear.
- Rinsing removes excess starch and debris from the rice grains.

Soak the rice. After rinsing, soak the rice in cold water for 30 minutes to 2 hours. This helps the grains expand and become fluffier.
- You can soak the rice in the water you plan to use for cooking. If so, use 1.25 times the amount of water relative to the rice. For 2 cups of rice, use 2.5 cups of water.

Chop the vegetables. If using vegetables like carrots, beans, tomatoes, or cauliflower, cut them into small pieces. Wash the vegetables and keep them ready to add to the rice.
Cook the Biryani Rice
Heat oil in a pan over medium heat. Add cloves, cardamom, and cinnamon to the pan. Stir for a few seconds, then add onions. Sauté until the onions turn translucent.
- Add tomatoes and cashews to the pan once the onions are translucent.
Add mint leaves, coriander, and green chilies to the pan. Sauté for about 1 minute, then add ginger-garlic paste. Stir the mixture and cook for another 2 minutes.
Add garam masala powder, chili powder, carrots, and beans. Stir continuously for a few minutes.
Pour in 8 cups of water. Add water to the pan and season with salt to taste. Mix all the ingredients well and bring the mixture to a boil.
Add the rice to the pan. Pour the rice into the boiling water. Add lemon juice and cover the pan. Cook until the rice is done.
- The rice grains should be firm but not mushy when cooked.
- Avoid stirring the rice while checking to prevent breaking the grains.
- Add more water if needed, cover, and continue cooking.

Serving the Dish. Biryani rice is best served hot. You can pair it with Indian curries or other flavorful main dishes for a complete meal.
