Preparing smoked meat in a microwave or frying it are among the quickest ways to make breakfast. However, for achieving the perfect balance between crispiness, tenderness, and rich flavor, you should try cooking it in the oven. This guide will walk you through the basic method of smoking meat in the oven along with two delicious variations: smoked meat glazed with sugar and smoked meat wrapped in green beans and baked.
Ingredients
Basic Oven-Smoked Meat
- 450g smoked meat
Smoked Meat with Sugar Glaze
- 450g smoked meat
- 1/2 teaspoon ground black pepper
- 1/2 cup brown sugar
Smoked Meat Rolled with Green Beans and Baked
- 350g green beans
- 5 slices smoked meat
- 3 tablespoons melted butter
- 1 teaspoon ground black pepper
- 1/4 teaspoon garlic powder
- 1/4 cup brown sugar
- Soy sauce
Steps
Basic Oven-Smoked Meat

Start with a cold oven.
Arrange the smoked meat slices on the baking tray.
- Spread the meat out so that it doesn’t fold or overlap with other pieces. This will ensure the meat cooks evenly.
- If you prefer, you can line the tray with foil to make it easier to clean the fat that drips off the meat.

Place the tray in the oven and set the temperature to 205℃.
- You can adjust the temperature to 190°C or 218°C. At 190°C, the meat will be softer with a melt-in-your-mouth texture, while at 218°C, it will be crispier with a firmer texture. At 204°C, the smoked meat will be chewy and moderately crispy.
Grill the first side of the meat for about 12-15 minutes.
- If cooking at 218°C, it’s best to grill the first side for just 10 minutes.
Take the meat out of the oven. Flip the pieces and continue roasting for another 8-10 minutes.
- If roasting at 218°C, you may want to check the meat after 5 minutes on the second side.

Keep roasting until the meat reaches the desired level of crispiness, then remove it from the oven.
- Depending on the oven temperature and the texture you prefer, this step should take between 15-35 minutes in total.

Oven-Smoked Meat with Sugar

Preheat the oven to 160℃.
Mix ground black pepper with sugar in a small bowl using a spoon. Place the smoked meat in the bowl and use two forks to roll the meat so that the sugar and pepper evenly coat the pieces.
Place the meat slices on a baking tray lined with foil. Sprinkle the remaining sugar on top of the meat.
Cover the meat with another layer of foil. Then, place another tray on top of the meat. This will prevent the meat from curling while it cooks.
- If you don’t have a tray that fits, you can use one or two oven-safe pans as a substitute.
- If you don't have foil, parchment paper works as well.
Place the tray in the oven and roast the meat for about 15 minutes. Check the meat by lifting the foil or parchment paper.
- Remove the tray from the oven when the meat is brown and crispy.
- If the meat still looks pale and isn't crispy, continue roasting at the same temperature.

Take the tray out of the oven when the meat is brown and crispy.
Smoked Meat Wrapped in Green Beans and Baked

Preheat the oven to 205℃.

Wash the green beans and trim both ends. Discard any beans that are brown or damaged.
Place the beans in a large pot and add water. Bring the water to a boil and cook until the beans turn bright green and are still crisp; this should take around 8 minutes.
While waiting for the beans to cook, arrange the smoked meat on a microwave-safe plate. Heat the meat in the microwave for about 1 minute or until it is nearly cooked but not yet browned or crispy. Use a knife or scissors to cut each slice of meat in half. Place the pieces on one side of the plate.
- If you don’t have a microwave, you can quickly fry the meat in a pan or place it in the oven.
Remove the pot of beans from the stove and drain the water. Use a paper towel to pat the beans dry.
Take a few green beans and wrap them with smoked meat to form small bundles. Secure the meat with toothpicks and arrange the bundles on a plate. Continue making bundles by rolling the meat around the beans and securing them with toothpicks until all the beans and meat are used.
Mix butter, soy sauce, garlic powder, black pepper, and brown sugar in a small bowl. Stir the ingredients together with a spoon. Dip each bean bundle into the sauce, making sure to roll them so all sides are evenly coated. Place the coated bundles on a baking tray.

Place the baking tray in the oven. Roast the meat for about 15 minutes or until it turns brown and crispy. Finally, remove the tray from the oven and serve.
